Christmas Eve Dinner

Because it is Christmas and we should have a great meal, I prepared a three course dinner for the three of us.  Let's start with the first course.

Escargot de Bourgogne

Kevin requested escargots (snails) and he can never have enough of them, I made sure to serve him a full portion of 6 escargots.

Hoa and I we shared a portion of 6 escargots 'cause we want to keep of girlie figure! 

 

Escargots de Bourgogne is prepared with garlic and parsley butter and are widely known as a refined French product. This dish might scare a lot of people away just by hearing the word "Snail" but if you give them a try I am pretty sure you will them.  The escargots go so well with the garlic parsley butter and it is even more delicious when all the escargots are gone and you find yourself moping all the sauce with a good piece of bread... So Good!

 

 

2nd Course : Lobster soup

Here I am plating the soup by putting on the plate a layer of pan seared mushrooms, poached lobster in beurre monté (emulsified butter).

 

Adding a bit of beurre monté on the lobster.

 

The soup is then served without the broth so that you can see the lobster and mushrooms.

The broth is then poured at the table.

 

     

Final presentation of the soup.

This soup is really amazing and so flavorful.  I used the claw meat for the soup and the body for my next course.

 

3rd Course: Macaroni and Cheese from the French laundry

Macaroni and cheese is a very labor intensive dish, it takes at least 3 to 4 hours to complete the broth but the result is amazing.  we all love this dish.

Orzo is cooked and ready to be plated.

Lobsters are re-heated in slow heat in beurre monté.

Here I am starting to plate....

Lobster broth in poured over the orzo and a disk of melted and baked parmesan cheese is resting on top of the lobster.

Final presentation of the dish.

This is a 2 pound lobster after been poached and shell removed.

We usually eat out Christmas Eve but I think we are going to stay home from now on and enjoy a nice meal without any fuss.
