I served canned foie gras and caramelized apples for Appetizer. I purposely choose to serve only one dish because I want my friends to enjoy their dinner and make sure they are not full after the appetizers.
Wine from Phuc and Huyen
2 bottles of Chateau Guiraud 2001 sauternes Winemaker's notes: Number 23 on Wine Spectator Top 100 Wines of 2004! "Golden yellow. Butterscotch and vanilla, with hints of ripe apples. Full-bodied, with lots of sweetness and a spicy apricot and honey aftertaste. Excellent concentration and balance. Loads of botrytis character on the finish. Intense. Hard not to drink now because it's so luscious and rich. Best after 2008." -Wine Spectator

Fonseca Port 1994 Wine Spectator Review: Hold on to your hat. This is the best Fonseca since 1977, and it's probably even better than that classic vintage--more like the breathtaking 1948. Mind-blowing, with masses of color, aroma and fruit flavor. Smells like fermenting berries, boasting loads of crushed grape, violet and berry character. Big, full-bodied and very sweet, with tons of tannins and a sweet finish. Tannic and huge, it's a long-term, great Port. Best after 2012. 8,000 cases made. Score: 100 -James Suckling, April '97 |
Caymus 2006 Cabernet Sauvignon Wine

Silver Oak Cabernet 1994 Wine spectator Review: Combines ripe, rich, complex fruit with a sense of finesse and harmony. The core of anise, currant, sage and cedar unfolds to reveal more depth and complexity. Finishes with a long, satisfying aftertaste. Drink now through 2006. 39,000 cases made. Score:89
