Platting/Behind the scene
Platting 17 (14 adults + 3 kids) plates is not an easy task either so Ha help me while I am cooking or putting on the last finish touch on a dish.

While I am cooking the shrimps and scallops, Ha is spooning some mashed celery root on each plate....

Shrimps and scallops are added. Then the celery emulsion is poured around the mashed celery root.
Celery leaves were added and this is how the dish ended looking like.
Pan Seared duck with ratatouille
Here the duck was pan seared and then was finished in the oven. Here Ha is putting a duck breast on each plate.

That's a lot of duck breasts!

The next step is adding the ratatouille on each plate....
Spooning the peppercorn sauce and to give the dish a little "BAM" some chives are added.
