DAY 2 -Cooking the beans...

I promise this will be an easy day so let's start withy the preparation...

 

Your beans should swell up and soften.  Drain and rinse the beans.

Place the beans into a large pot with half of an onion, smoke pork neck bones, bouquet garni and fill he pot with water.

Bring to pot to a boil and reduce to a simmer for about 45 minutes or until the beans are tender. 

Strain the beans and set aside.

Drain the neck bones and set them aside with the beans.

 

In a large pan heat 2 tablespoons of oil add the sliced onions, garlic, and cumin (optional) and cook until soft and translucent.

Add the carrots and cook for a minute.

Stir in the tomato paste.  Cook for 2 minutes.

I transferred all the vegetables into a large pot and then add the pork bellies, the 2 types of tripe, and pig's ears.

Then the beans and neck bones are added into the pot.

Add the reserved cooking liquid from the pork bellies.  Bring to a boil, reduce the heat to a simmer and season with salt and pepper.   Cook for about 2 hours .

Let the pot cool down and refrigerate overnight.  Per Tony's recommendation, it will be so much better tomorrow!

And with that your are done with Day 2!  Basically you are 90% done with the dish.

Day 3 will be a walk in the park.
