DAY 3 - Finishing the dish and setting up the table

Day 3 is actually pretty relaxing!   All you need to do is the preheat the oven to 325 degrees.  Cut the chorizo into chunks and add them to the pot!  Tony also add the Blood sausage into the pot but I hold them and will cook them separately (I just don't want the blood to ooze out of the casing and ruin my dish).  

Put the pot in the oven for about 1 1/2 hours.  Once done,  remove from oven and let rest for 15 minutes before serving.

And the pot goes in the oven!  Set up an alarm and you can forgot all about it and concentrate on doing other things.

 

Setting up the table

while the pot of tripe is in the oven and I have over 2 hours to put the party together.  Before the guests are arriving I am setting up the table!  Nothing fancy this time since this supposed to be a humble meal but I still want to make the table looks nice.

Tripe is a country French dish so the theme of my table is also going to be French country with blue and yellow theme.

Table is set up for 12 people!

Time to eat!

The time has come... the big pot of tripe is ready for all of my brave gastronomic adventurers friends!  When I told them I am going to serve tripe, they were all pretty excited.

The real test is to find out if the dish meet their expectations (and they do have lots of opinions about food)!  As Tony already warned in his remark that this dish is either do or die!

Well, we will find out soon the verdict!

 

The bowl of tripe actually looks pretty appealing and we all happily dig in.

I have to say that the tripe was cooked properly and there are no smell from the tripe (that's a good thing)

My friends are cleaning their plates but I don't see anybody having seconds!

  

I wanted to take a picture of all of us eating Tripe as a proof that we all ate tripe.

A plate with a bit of everything, beans, sausage, neck bones, polenta, pork belly, etc...

I served the tripe with polenta, and sautéed mushrooms in cream, I also added hot Italian sausage as I was not sure how the blood sausage was going to turn out.

Well, the blood sausage were a disaster! It has a very soft and sticky texture and none of us like it!  So my recommendation if you can not good blood sausage just leave them out and replace them with Hot Italian sausage!

So I am sure you are dying to hear the verdict?

Is it going to be NO GUTS, NO GLORY? 

The dish was well received in a sense that everybody ate their plate but nobody was in love with the dish! The dish was not bad but it was not great either!

Anyway, I knew that this dish was not going to knock anybody socks off but I took a chance and unfortunately it did not pay off so therefore:

GOT GUTS AND STILL NOT GLORY!  but it was still a fun evening!
