Sage is under the helm of Chef owner Shawn McClain. Shawn McClain is the executive chef and partner of Spring, Green Zebra, and Custom House – three of the most popular and trendy setting restaurants in Chicago, each with a distinct theme. McClain’s restaurants set the bar for the city’s upscale-casual dining, with, McClain says, “Great food, great service, and interesting wine, without pretension, in an urban setting.”

McClain is known for traditional, refined and sensible cuisine that's elevated with innovative concepts. In 2002 McClain was named the “Rising Star Chef of the Year” and in In 2006, McClain was honored with the “Best Chef Midwest” award from the James Beard Foundation.  After reading his bio I am pretty impress and wanted to give Sage a try!   

 

Hoa started the evening with a cocktail

Our waiter recommended the Corpse revival #2 which is rightfully considered by many to be the best tasting of the Corpse reviver cocktails containing Gin, Cointreau, Fresh lemon juice, Lillet Blanc, and absinthe

I took a sip and it is indeed very refreshing and so good!

 

 

Our waiter brought out a tray of assorted bread for us to select.   I asked if they bake their own bread at the restaurant but he told me they buy their bread at a special bakery.

 

Our reservation was at 6:30PM because Thuan had to go back to work afterward so we selected the early evening menu, a 3 course fix menu for a mere $49!  What a deal!

The first amuse bouche is a gazpacho to wet our appetite!

 

Hoa selected the creamy potato and artichoke soup with marinated Pearl onion, Mache and Lemon

 

Very tasty, creamy, velvety, and tasty!  Great way to start a meal.

 

I selected the Di Stefano Farms Burrata Cheese with marinated Summer Squash, shaved fennel and crispy sunflower seed.

 

The Burratta are hand-formed and they are soft and moist, creamy, smooth and delicate but it is pretty bland to me.  The marinated vegetables added some texture but I wanted something more substantial!

I think a vegetarian person would enjoy this dish more than I did.

 

I selected the Pan Roasted Bass with grilled summer plum, roasted Padrone peppers, and crispy Pancetta

 

Gorgeous dish to look at.  The fish was cooked and seasoned properly! The skin was crispy and the pancetta, the vegetables were tasty and this dish is also pretty healthy.

 

Hoa selected the Shelton's farm organic Chicken with Farmhouse sausage, creamy fregola, Alfafa hay smoke.

 

Oh my god... this dish is incredible delectable!  Every thing on this plate is tasty and perfect cooked!  The chicken is moist and had so much flavor.  Best dish of the evening!

 

Thuan loves steaks so he opted for the Snake River Farms New York Strip with Beef Marrow/La Ratte Potatoes/Glazed Maitake Mushrooms

 

According to Thuan the steak was excellent!  He also enjoyed the sauce and the mushrooms.

 

After dinner there is nothing better than a hot cup of coffee unfortunately my coffee was pretty watery!

 

White chocolate ganache with blueberries, popcorn, and corn ice cream.

 

The dessert was just okay, I did get the addition of the popcorn which has to taste by the way but I did enjoyed the corn ice cream.

 

After our dessert our waiter brought out white chocolate concoction which I thought was just too sweet for my taste!

Then we ended the meal with a pretty lousy cup of coffee.

Anyhow I love the atmosphere of the restaurant I will be back to try their regular menu!
