Gâteaux de Riz - 10/4/08
Gâteau de Riz (rice cake) is another French style of rice pudding that is poured into a caramel lined dish or pan and baked. If you enjoy rice and you like crème Brûlée, I think you’ll also will like Gâteau de Riz. It’s creamy, a bit rich but very tasty. Gâteau de Riz is made of rice, milk, sugar and cream. You can eat it plain as it is or you can topped it with a few raspberries or you can also add a layer of brown sugar and caramelized it to resemble a Crème Brûlée.

The crust is crunchy and the rice custard is sweet, rich and delicious!
To me the rice custard look like a burst of sunshine!

Here I topped them with a few fresh raspberries and a raspberry sauce. It is really yummy!
Preparation work..
In a sauce pan the milk, rice and salt is brought to a boil.. |
Until all the liquid has been absorbed and the rice is soft. Butter is then added. |
Eggs and sugar are whipped until well mixed and the hot rice is slowly added to the mixture |
The custard is ready... |
I used a pâte sucréee for the shell. |
Blind baking the shell, basically it is the process of baking a pie crust without the filling. |
The rice custard is then poured into the pre-baked shell. |
