Appetizer and Guests- 6:30PM

It is 6:30Pm and most of our guests are here!  Phuc opening a few bottles of wine to start the evening!

 

We are starting the party with coffee marinated wagyu beef from Phuc.  The theme from Phuc is Tuff and Surf.  Phuc will serve the first dish (Tuff) and the last dish (Surf)

The beef is grilled and is resting a few minutes so that the heat is re-distributed evenly.

If you cut the meat right away, all the juice will run out and will leave the beef dry.

 

Slicing the beef...

There is beef and then, there is Wagyu Beef!   You will not find Wagyu beef at your regular groceries store!  Phuc has to order via a wholesale shop that specialized in meat. We almost did not get Wagyu for this party because there is a very small supply! Fortunately, Phuc called 2 weeks ahead to make sure the Wagyu beef will be available for this party!  Apparently the shop originally could not fulfill Phuc's order so the owner had to make a few phone calls to get the meat for Phuc. 
Phuc got Wagyu, Culotte Steak for this evening, Culotte Steak is similar to Skirt steak.  Culotte steaks are tender, juicy, marvelously rich but yet mellow with abundant marbling, tender texture and succulent taste!  We are in heaven..

By the way, washing the wagyu down with a nice glass of Caymus was great!
