Ping-Gai - BBQ Chicken wings- 9/11/10

Ping Gai is a very popular BBQ dish in Laos.  You will find this dish in every street corner in Laos.  It is impossible to resist it when you go by and the smell is so appetizing and tempting especially when you are hungry.  The enticing aroma of the sizzling meat on the grill makes it very popular with the street vendor's clientele.   Very easy to make and it takes less than 5 minutes to prepare the marinate.

Usually the Laotian eat Pink Gai with sticky rice and Tam Mak Hoong.  The chicken is really tasty right after it is taken off the grill.

Preparation work..

1 1/2 pound chicken wings

1 teaspoons salt

1 teaspoons sugar

1 teaspoon oyster sauce

1/2 teaspoon pepper

1/4 cup chopped lemon

Minced cilantro or green onion

1 teaspoon turmeric

Clean the chicken wings and put them in a large bowl.

Put all the ingredients together and mix it well.

Pour the marinade over the chicken wings

Cover the chicken and let it marinate for a few hours or overnight.

Before grilling add a bunch of green onions or chopped cilantro

Barbecue the chicken wings over medium heat for about 5-7 minutes or each side until they are cooked through and golden brown.
