Squid Meatballs with saffron sauce- 1/4/08

 

I am actually testing out this recipe for a Tapas party that I am having soon.  I saw this recipe and I though Squid in a meatballs sounded pretty appetizing.  The recipe is fairly easy to make too.

The Meatballs are actually pretty tasty but I did not really care for the saffron sauce.  I think I will make an aioli saffron sauce instead.

According the cookbook Squid and pork is a very common combination in the Spain.

Preparation work..

Here are the ingredients for this dish: Squid, ground pork and  dry bread crumbs

I am cutting the squid into small pieces.

The squid is then chopped into chucks.

This is the texture of how the squid should look.

Sautéing the onion until golden

Adding the onion into the mixture.

Next I will mold the mixture into small balls and then they will be deep fried.
