Madeleines with lemon zest- -3/12/10
I love Madeleines! When I am in a hurry and I have to bake something... I usually opted to bake Madeleines because they are very easy to make and it only takes about 1o to 15 minutes to bake in the oven. I usually bake them plain but this time I decided to add some lemon zest to the dough and they turned out to be delicious. The lemon zest added the extra unexpected flavor to the Madeleines.

You can either serve them plain or you can dust them with confectioner's sugar. It is basically just for the look, the additional confectioner's sugar on top does not change the taste of the Madeleines.

Preparation work..
Ingredients for: 24 Madeleines 10 tablespoons unsalted butter 1 cup all purpose flour Pinch of salt 2 eggs 2/3 cup of granulated sugar lemon zest of 1 lemon Confectioner's sugar for Dusting |
Melt the butter and put aside. |
Put the flour, sugar, lemon zest, salt, and eggs in a bowl. |
Mix it until well combined and then pour the melted butter and stir until the dough is smooth. |
Next, spoon the dough inside the Madeleine mold. |
Preheat your oven to 350 degree and bake the Madeleines for about 10/15 minutes or until the edges are golden brown. |
Freshly out of the oven... Un-mold and put the Madeleines on a cooler rack. Dust with confectioner's sugar when ready to serve, |
