Lobster ravioli with creamy crab meat sauce- 1/23/10


Ravioli is a type of filled pasta composed of a filling sealed between two layers of thin pasta dough.   Ravioli are often topped with a red tomato -based sauce or they can be often paired with sage and melted butter, or more rarely with pesto or broth-based sauces.  Tonight, I choose Lobster ravioli that I had purchased at Traders Joe.  I wanted to give them a try and see how good they are.  I also paired them with a classic creamy tomato and crab meat sauce.  You can serve this dish during the week because it only took me less than 20 minutes to complete this dish but the result was outstanding!

I did not have a lot of crab meat so I added some pan fried shrimps to the dish and they turned out to be just fantastic!

Preparation work..

Ingredients for 4 people

Crabmeat Cream Sauce:

2 ounces unsalted butter

1 tablespoon chopped shallots

4 ounces whole chunk Maryland crabmeat

2 ounces Cognac

5 ounces tomato sauce

10 ounces heavy cream

Salt, Basil or chive to garnish

1 package fresh lobster Ravioli

Sauté pan at medium heat, add butter, shallots, and sauté until shallots are translucent.

Add the crabmeat and sauté for about 2 to 3 minutes. Remove the  pan from the burner and add Cognac ...

then place pan back on the heat to cook off the alcohol. 

Next, add the tomato sauce to the pan...

then add the cream with salt and cook for a few minutes or.... until it reduces half way and becomes creamy.

while the sauce is cooking on the stove.  Cook the Ravioli according to the package and once it is cooked drain the ravioli.

Adding basil to sauce.

Add the cooked ravioli to the sauce and let cook together for about 1 minute before serving. Garnish with chives or basil.
