Spinach salad with fresh strawberries and roasted chicken - 3/28/10

 

I gained a lot of weigh lately so I am trying to eat light at night!  Tonight I am making a spinach salad with fresh strawberries and roasted chicken.  For the vinaigrette I decide to make strawberry vinaigrette and then I sprinkled the salad with honey roasted cashew.  I have to stay this salad is delicious and it is so easy to make.

The color are vibrant and above all, the salad is really good!

The strawberry vinaigrette turned out to be very tasty and it is perfect with the salad.

Preparation work..

Ingredients

For the vinaigrette

4 ripe strawberries, chopped

oil

1 tablespoon of honey

salt, pepper

lemon juice

For the Salad:

a bunch of fresh spinach

honey roasted cashew

roasted chicken (store bought)

3 to 4 strawberries slice thinly

 

slice the strawberries thinly and set aside to use in the salad.  Chop roughly 4 other strawberries to make the vinaigrette

Put the chopped strawberries in a bowl and use a hand held blender to mash them.

Pour the mashed strawberries in strainer and press down to get the all the juice.  Throw away the remaining pulp inside the strainer.

Next, add oil, salt, pepper, honey, and lemon juice and taste accordingly.

This is how the vinaigrette looks when it is done. 

I went to the store and bought a roasted chicken because it is convenient and it is pretty good.

Kevin and I hoa do not like the breasts so that's why when I buy roasted chicken I always have to find a way to use it, if not they will not eat it.

All the preparation is done, all you need to do is plate the salad.
