Coconut Tapioca Pudding - 2/16/08
This is a really simple dessert to make on a cold rainy day. I love coconut! Any dessert that has coconut in is good for me....
This dessert is best eaten hot, warm or at room temperature.

Prep work..
The ingredients for this dessert is so simple: Eggs, milk, coconut milk, salt, sugar, and tapioca pearls. |
I am bringing the coconut milk, milk, sugar and salt to a boiling point. |
Next, the tapioca is poured into the coconut mixture. |
The mixture is then cooked until the pearls are translucent and soft. |
The eggs are added in the end and then mixed into the mixture.
