Little treacle tart - 3/8/08
Treacle tart is a popular dessert in the UK. It has become somewhat of a curiosity in other countries due to its frequent mention in the Harry Potter books. If you are a fan of Harry Potter than you know that Treacle tart is in fact Harry’s favorite dessert.
I saw this recipe in Gordon Ramsey's book and was immediately attracted to how he presented his treacle tart. Ramsey made some alternation to the traditional treacle tart by adding eggs and almonds to the filling to hold it together and then he baked it in a pâte sucrée base.

After baking all these little treats I could not resist so I sat down, poured a nice cup of freshly brewed coffee and savor a few of these little treacle tarts... I was a nice little break! |
Preparation work..
White breadcrumbs, eggs, golden syrup, ground almonds are mixed together. |
The mixture is blended to form an homogenous paste. For best result the paste will need to chill for 24hours |
The pâte sucrée is draped over the muffin molds. |
Apricot Jam is spooned into the pâte sucrée

Next, the almond mixture is then spooned to fill in the cavity. |
Ready to go in the oven... |
Freshly out of the oven. |
Once it is cooled down, the excess pastry is then removed. |
