Molten Chocolate cake - 12/25/10

Molten chocolate cake or Lava cake is firm on the outside but once cut open it reveals a soft, silky chocolate center oozing out. There are many tricks to help achieve this effect, but this is one of the simplest; All that is required is the bake the dessert to a precise timing that allows the outside to become firm, leaving the center soft.  Make sure you have an alarm clock in the kitchen to keep track of the baking time.  When the molten chocolate cakes are ready they will rise up in the middle and feel firm to the touch.  Don't leave them in the oven any longer, as once they begin to crack, it means the center will start to firm up too, ruining the whole point of the dessert (having a running center).

The cake part is moist and rich in dark chocolate and the molten center is warm and velvety.  Once you cut the cake the gooey center just gushed out like a Lava (therefore the name Lava cake).

I highly recommend this for a dinner party. It will surely wow your guests, and give you tons of time to socialize. You wont be locked up in the kitchen all night prepping and cooking. Serve this sprinkled with sifted powdered sugar or whipped cream.

Preparation work..

For 4 cakes

3 eggs, plus 2 egg yolks

1/4 cup sugar

4 1/2 ounces good quality bittersweet dark chocolate

1/2 cup unsalted butter

1/4 cup flour

Prepare the dessert 1 day in advance and put them in the fridge

Melt the chocolate and butter gently in a bowl set over a pan of simmering hot water. 

Stir until the chocolate and the butter is melted.  Remove from the heat.

 

In a bowl, beat together the eggs, egg yolks, and sugar until pale.  Set aside

Add the vanilla and sour cream

Slowly add the egg mixture.

Stir until smooth.

Fold in the flour.

Keep stirring until the batter is smooth.

Buttered your mold and then pour in the batter.

Preheat oven at 350 degrees.  Bake for 15 minutes or until the centers dome looks dry.

Freshly out of the oven... 

Un-mold and serve right away.
