Caramelized Apples upside down cake - 10/24/09

There is one thing I do really well is to caramelize Apples!  I just happened to have a bunch of apples in my fruits bowl and there is not way Hoa and I can eat them all before they go bad so I thought I should caramelize them and use them for dessert.  After caramelizing the apples I did not want to do a Tatin Tart so I decided to make a cake and then decorate the top of the cake with the caramelized Apples.  

Caramelized apples was perfect for this cake.  This cake is also excellent with a scoop ice cream and a hot cup of coffee or Tea!  

 

This cake is so good freshly out of the oven!

Preparation work..

Ingredients:

  • 8 Apples

  • 12 Tbs. firmly packed light brown sugar

  • 6 Tbs. unsalted butter, melted, plus 8 Tbs.  unsalted butter, at room temperature

  • 1/2 cup granulated sugar

  • Grated zest of 1 orange

  • 2 eggs

 

  • 1 cup all-purpose flour

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 1/4 cup heavy cream

  • 1 tsp. vanilla extract

Combine the 8 Tbs. butter, the granulated sugar and orange zest.  Beat on medium-high speed until creamy.

Add the eggs one at a time, beating well after each addition until well combine.

In a bowl, sift together the flour, baking powder, baking soda and salt. Using a rubber spatula, fold the flour mixture into the butter mixture. 

Heavy cream is stirred into the mixture until thoroughly incorporated.

Beating the batter until it is well combined and then set aside.

Apples are caramelized and I am lining them in the bottom of my mold.

Here I am pouring all of my batter into my mold.

The batter is now covering all of the caramelized apples and it is now ready to go in the oven for 45 minutes at 350°F. 

Freshly out of the oven.  Once the cake is cooled off it is inverted into a dish so that the apples will be on top.
