Caramelized Apples upside down cake - 10/24/09
There is one thing I do really well is to caramelize Apples! I just happened to have a bunch of apples in my fruits bowl and there is not way Hoa and I can eat them all before they go bad so I thought I should caramelize them and use them for dessert. After caramelizing the apples I did not want to do a Tatin Tart so I decided to make a cake and then decorate the top of the cake with the caramelized Apples.
Caramelized apples was perfect for this cake. This cake is also excellent with a scoop ice cream and a hot cup of coffee or Tea!

Preparation work..
Ingredients:

Combine the 8 Tbs. butter, the granulated sugar and orange zest. Beat on medium-high speed until creamy. |
Add the eggs one at a time, beating well after each addition until well combine. |
In a bowl, sift together the flour, baking powder, baking soda and salt. Using a rubber spatula, fold the flour mixture into the butter mixture. |
Heavy cream is stirred into the mixture until thoroughly incorporated. |
Beating the batter until it is well combined and then set aside. |
Apples are caramelized and I am lining them in the bottom of my mold. |
Here I am pouring all of my batter into my mold. |
The batter is now covering all of the caramelized apples and it is now ready to go in the oven for 45 minutes at 350°F. |
Freshly out of the oven. Once the cake is cooled off it is inverted into a dish so that the apples will be on top.
